one more hat often worn by malizabeth is a chef's hat, so to speak. she's spent lots of time cooking, baking and experimenting with food ever since they were a kid, but her all time favorite thing to make in the kitchen is cookies. they love baking for their friends and family, and since she's noticed an increase in vegan and dairy free loved ones in the past few years, they've been perfecting vegan versions of all her recipes that taste exactly like - or sometimes, surprisingly even better than the original versions! eventually they decided to start malizabaked, so she can share their cookies with more people, vegan and non-vegan alike!

HELLO, my name is Diane Mejia.

I was diagnosed with severe gluten intolerance over 5 years ago. I happened to be finishing up my pastry degree and culinary degree at the time. Rather than throw in the towel, I decided to make pastries and baked goods that I could enjoy (without getting sick). I also experimented with flavors for close friends, one of them being Amy, who now has a cupcake flavor named after her in her memory, “Hey Amy.”

Setting out on my own quest to make gluten-free baked goods, I also discovered the vibrant and amazing gluten-free and vegan communities here in Chi-town. I connected with all kinds of folks, vegan, gluten-free and indifferent, who all loved my baked goods.

So, I decided to go on this journey and am constantly evolving to keep Mindful Baking up to date with new and tasty pastries as well as savory food. The rest is history!

HexeRose is a craft shoppe founded by Hannah Rose. She is a costume designer and technician by day, but needed an outlet for her many other creative pursuits at night. Now the house is bursting at the seams with glitter, yarn, and paint. She is finally sharing her artwork with the general public, so she can continue making all sorts of fun frippery.
